Salsa froide ou tiede pour les viandes blanche ou les poissons Avec des tortillas chips, cest du tonnerre. 5 Roma tomatoes I Chile ancho 5 chiles morita 6 oz petita 2 cloves of garlic 1/2 tsp cumin powder 1/2 tsp cinnamon Salt to taste ( 1 tsp or more). You will need a blinder, a frying and a medium pot for this recipe. Remove seeds from chile ancho and morita. Put in a medium pot ,5 Roma tomatoes , cover with cold water. Wash your tomatoes first . Add 1 tsp of salt. Bring the water to boil for 3 minutes. Add the chile ancho and morita. Let sock the the the chile ancho and morita for 3 to 5 minutes. Remove the cooking water , do not use it , it will be bitter. Put everything in a blinder . Add garlic, cumin and cinnamon and start the blinder for 15 seconds. In a hot frying pan, roast the pepitas for 2 minutes. Add the roasted petita in a blender . Blend again until smooth. Add salt to taste . Enjoy. Best regards lionel
